Recipe: Coconut, cacao and date balls

A really easy snack, that is delicious and an alternate option to chocolate rum balls.

Ingredients

12 Medjool dates

1 cup almond meal

1/2 cup shredded coconut

1/3 cup coconut oil

1/3 cup cacao powder

1 tbsp chia seeds

1/3 cup extra shredded coconut for rolling

Method

  1. Soak Medjool dates for 1 hour and then de-pip the dates

  2. In food processor mix, dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds until mixture comes together.

  3. Allow to stand for 20 minutes, so allow chia seeds to soften

  4. Roll mixture into bite size balls and roll in coconut to coat.

  5. Store in fridge, I like to allow for 2 hours before eating so balls harden.
